Grilled Lemon & Sumac Leeks

Meat doesn’t always need to be the centrepiece of your BBQ. This simple, bold recipe puts veg front and centre - sweet, smoky leeks paired with the bright, zestiness of grilled lemon, a hit of umami from parmesan, and the vibrant lift of our Lemon, Sumac & Green Herb Blend. It’s just 4 ingredients, but it hits way above its weight. A showstopper for any fire-cooked feast.

Ingredients - (serves 8 as a side or 4 as a main)

Method

  1. Trim the tops and bottom of the leeks to shape them uniformly, but ensure there is still a good 6-8 inches of green and white stem on show. Slice each leek in half lengthwise. 

  2. Place the leeks cut-side down directly over hot coals. Grill until nicely charred—about 3–5 minutes per side. At the same time, grill your lemon halves cut-side down until caramelised and softened.

  3. Remove any tough or overly charred outer layers from the leeks. Arrange on a platter. Drizzle with olive oil, a squeeze of grilled lemon juice, and a generous shower of freshly grated parmesan.

  1. Finish with a big pinch of Lemon, Sumac & Green Herb Blend for that citrusy, herby kick.
